Tamales

There are so many different types of tamales, varying the ingredients from region to region. Some are pork or beef-stuffed. Fresh corn tamales are made by cutting off the fresh corn kernels and mixing them with the masa, then wrapping with the fresh green husks. Yucatan has it's banana leaf as a wrapper, while most tamales are wrapped in dried, cleaned corn husks.  There is even a large tamal, Pib Pollo, from Yucatan.  It is a large stuffed "pie", wrapped in banana leaf. Of course, there are also dessert tamales, usually filled with raisins mixed in with the masa.
