Three Recipes for Verdolagas

Sencillas
  • 2 Pounds Greens
  • 1/4 Cup Olive Oil
  • 1 Small Diced Onion
  • 2 Cloves Garlic
  • Salt & Pepper
Wash the greens well, then drain and pat dry. Cut into pieces about 1" long. In a large frying pan, add oil to medium high. Sauté until translucent, add garlic and continue 30 seconds more. Add the greens and sauté about ten minutes, or until tender. Lower heat and allow any accumulated liquid to evaporate. Salt & pepper to taste. in Green Sauce

Ingredients:
  • 3 lbs chicken pieces, beef cut into 2" square pieces or pork cut into 2" square pieces (choose one of the above)
  • 1 bay leaf
  • 3 quarts water
  • 2 prickly pears (optional)
  • 1 each: dried ancho, passilla and guajillo peppers
  • 3 cloves garlic
  • 1 small onion
  • 4 green tomatillos, husks removed
  • 1 pinch cumin seed
  • 1  cups water
